Once you've prepared this delicious, nutritious recipe a time or two, you can whip up a batch in minutes.

Chocolate Chip Bars

Ingredients:

Dry ingredients

3 cups freshly ground, organic spelt or whole wheat flour

2 cups almonds, finely ground in food processor

½ tsp. Real, Celtic or Pink Himalayan Salt

1 package organic, semi-sweet chocolate chips

 

Wet ingredients

1 cup organic, plain yogurt

1 cup extra virgin olive oil

1 cup raw honey

1 Tbsp. vanilla

 

Directions
1. Preheat oven to 300, and oil a 9x13 baking pan.

2. Combine dry ingredients in a large bowl.

3. Combine wet ingredients in a smaller bowl or 4-cup glass measuring cup.

4. Stir liquid mixture into dry ingredients.

5. Blend well and pour mixture into prepared pan.

6. Bake for about 40 minutes, until the bars just begin to brown around the edges and a toothpick inserted in the center comes out clean. Check at 35 minutes, or sooner if you start smelling something yummy! Everyone's oven is different, and these taste much better moist than dry.

 

Variations

  • Use unsweetened carob chips instead of the chocolate chips and add the zest of 1 orange.
  • For a light snack, omit the chocolate chips and substitute maple syrup for the honey.
  • Experiment by substituting peanuts for some of the almonds and peanut butter for some of the olive oil.
  • Experiment with melted coconut oil instead of olive oil. (I haven't tried this yet.)
